““Mushrooms are prebiotics – they encourage the growth of beneficial gut bacteria and inhibit the harmful microbes,” food expert Mr Marsh explains. “They are also rich in vitamin D.” When you buy your mushrooms, look at the label; if they are grown with UV light, they will be higher in vitamin D. “The greater variety of mushrooms you use – button, portobello, shiitake – the better it is for your microbiome, or gut bacteria,” says Marsh.
A 2017 study from the Journal of International Food Sciences concluded that the best way to cook mushrooms while still preserving their nutritional properties is to grill or microwave them. Fried mushrooms revealed a severe loss in protein and carbohydrate content, but an increase in saturated fat, which is not especially good for your heart. “If you do fry your mushrooms, use olive oil or another vegetable oil,” says Marsh. “Or throw everything in the air fryer.”
