The black truffle, prized by Michelin chefs, is threatened with extinction as climate change wreaks havoc on its natural habitat in the hills of Aragon in Northern Spain.
The truffle which can fetch up to €900 a kilogram is fast disappearing in the region - some harvesters report a 90 per cent downturn in production. Drought means yields of this renowned flavourful and aromatic truffle are falling.
A century ago the European truffle harvest yielded 2,000 tonnes - today it is less than 20 tonnes!
