The flexitarian/ vegetarian/ vegan lifestyle trend continues apace with lots of chatter in business pages of the rise of new companies to fill the market gap. One such company is Perfect Day which has pioneered so-called animal-free dairy products using dairy protein fermented from DNA-altered fungi.
The company claims to offer milk protein “produced sustainably and without the downsides of factory farming, lactose hormones or antibiotics”. Perfect Day focuses on providing its proteins to other companies, and has struck supply deals with several American ice-cream makers.
It all seems far removed from that other food trend of late, i.e. eating unprocessed food, food that your grandmother would recognise.
