Demand for exotics is on the up too according to Koert Pleunis, of Dutch company Pleunis Mushrooms. "We see an increased demand for specialty mushrooms".
This year Pleunis Mushrooms has decided to grow other kinds of mushrooms in addition to the usual white mushrooms they already cultivate.
