Reading a piece on a journalist who was converting to veganism for a week to see how it went, Stalker was struck by how often mushrooms got a mention.
Mushroom risotto seems to be a mainstay of the vegan existence when eating out.
Also the “scourge of the desultory sounding stuffed Portobello mushroom” was vegan option on nearly every restaurant menu. One café offered a delicious cooked breakfast; ”Involving kale, mushrooms and roast root vegetables like sweet potatoes.”
It certainly seems as if mushrooms are firmly on the vegetarian, vegan and flexitarian menu these days. All the better for the mushrooms industry Stalker reckons!
