Reading about one of the fancier eateries in Dublin, Stalker came across a previously unheard of culinary phenomenon that is mushroom glass. “Qu’est-ceque c’est que ça?” as the French might ask.
“ The mushroom ‘glass’ is being conjured up from dried powdered chanterelles, the deeply savoury mother of pearl tinged wafers dissolving on the tongue.”
This refined culinary delight can be found at the Heron & Grey , the Michelin Starred restaurant in the market at Blackrock, Co Dublin.
Apparently it’s a hard place to get a sitting at, but worth the effort one is told.
