We’ve all heard the latin phrase cogito ergo sum, but have we heard of the mushroom ergo? If you were at the NAMC 24 in Quebec in late June you might have heard Dr Robert Beelman give a talk on ‘Ergo, a healthy future for mushrooms’.
Ergo is the abbreviated term for the amino acid ergothioneine which is found in good quantities especially in exotic mushrooms. Dr Beelman reckoned that ergo is a potential gold mine for mushroom growers.
As an antioxidant ergothioneine has excellent cellular protection properties and may even have a beneficial effect against the incidence of Alzheimer's in populations.
