Apparently sales of wild and exotic mushrooms have risen by 25 per cent, thanks to celebrity endorsements and health benefit claims. Raw mushrooms are at the forefront, especially grated over salad, so they say. One hint for consuming more mushroom -" Try slicing a cultivated chestnut mushroom over parsley and dressing with olive oil, a squeeze of lemon juice and pepper."
