Talking of boosting demand for the fresh produce, Stalker liked this wee snippet from The Irish Times Lilly Higgins food column:
“I’ve been buying portobello or flat-cap mushrooms a lot recently. They’re great for so many reasons. It’s very easy to get Irish mushrooms, and they’re cheap too. They’re perfect for breakfast, lunch and dinner and are the ultimate convenience food.”
It’s hard to beat a bit of promotion like that. The recipe for the portobello baked eggs was also pretty scrummy sounding too! Maybe there’ll be room to include the recipe in next month’s edition.
