The latest research that highlights the benefits of Vitamin D could be more good news for the mushroom industry.
Vitamin D supplements could ward off age-related eye diseases, such as macular degeneration. Blood vessels that supply the retinas become clogged with debris over time, but a study at University College London’s Institute of Ophthalmology Effects found that when elderly mice were given vitamin D supplements, deposits of a toxic molecule were reduced and their vision improved.
If only the three blind mice had eaten their mushrooms, they’d still have their tails.
People are not mice, but they could up their intake of mushrooms to increase their vitamin D intake perhaps, and help guard against the development of such eye problems. It’s only a thought...
