The middle page spread of a scene from a mushroom factory in Japan was both amazing and a bit scary.
The scene is best described as a production line for the packing and sorting of enokitake mushrooms. 30 % of Japan’s enoki is produced at the JA Cooperatives in Nakano-City.
The central incubation and packaging hall pictured is enormous and over 5k tonnes is produced here every year.
