A new study from the US suggests that supermarket lighting could enhance the vitamin content of fresh vegetables.
The research by the Department of Agriculture compared spinach that had either been exposed to fluorescent light or kept in the dark under simulated retail conditions.
In the exposed leaves folic acid levels jumped by between 84 to 100% according to the paper published in the Journal of Agricultural and Food Chemistry.
Stalker wonders if this works for mushrooms too.
Considering all the talk of the UV light exposure that Monterey Mushrooms is up to in the US, perhaps supermarket lighting has been upping vitamin levels in mushrooms on shop shelves.
