Stalker was heartened to see another celebrity chef endorsing the copious use of mushrooms on telly recently.
Top Chef Heston Blummnethal's new series In Search Of Perfection, showing on BBC2, has the gastronomic world flapping.
On Tuesday 14th of November the show featured the chef trying to make the perfect steak. To garnish the steak the Michelin-starred chef used fresh mushrooms and made fabulous looking mushroom ketchup as well.
It is these small nods to the fresh produce that can have big effects on demand.
Check out the top Irish chef Richard Corrigan. He pronounced on his perception that Irish chicken was lamentable, and the whole processed chicken industry felt the demand slump.
Let's hope if he turns his attention to the mushroom, he'll give the locally produced ones a big thumbs-up.
The Meath chef has also had a pop at pork products lately, sending a shudder through that sector.
His new series of programmes is on Tuesdays in November and December on RTE1.
